Highland Park 25 Tasting Note by MasterOfMalt.com
The nose is a little more pungent than other Highland Park bottlings. Notes of soft peat and wood with oaked tannins. There is a thick honey in presence with notes of menthol, walnut and a herbal quality: fennel and grass. The palate is quite full with toffee and supple peat. A touch of winter spice develops with notes of oaky tannins to chew. The finish is warm and fiery with notes of spicy oak.

Nose: Full, rounded. Fudge, white chocolate, Oloroso sherry, honey, melon, lemon. Fruity .
Palate: More honey, slightly chewy. Nutty toffee. Nougat. Pistachio nuts. Turkish delight. Cedar.
Finish: Lemon, honey, roses. Fragrant, smooth. Balancing dryness.
Comment: Have this one with dessert.

Nose: Here the heather returns and the expense of the silkier honey. The peat also plays a big part, but fails to keep the emerging oak under a tight enough leash.
Palate: An unusually oaky dryness makes way for a steady build-up of sweetening honey. Still beautifully peated.
Finish: A much drier finish than the 18 Years Old but smouldering peat adds charm and stability. Some late honey gives a degree of complexity.
Comment: Still haven’t come across a 25 Years Old which quite matches the 18 Years Old, but this is a lovely whisky nonetheless and holds its shape and character brilliantly for such an old lady. Charming.
